One of the most famous, and friendliest Cambodian Cuisine is Korko or so called Vegetable Soup (My Friend from Scotland call it vegetable soup and her and her husband like to order Korko whenever we arrived Chanras Restaurant in Kampong Thom). This cuision composed of many kind of vegetable like bean, pumpkin, eggplant, leaf, papaya, young jackfruit, and so on. Some times it made from young palm fruit with pork rip, chicken, or river fish. Korkor is also one of the most favorite dishes, and foreigner favorite taste.
All its ingredient are easy to find and plus it also easy to cook, so here i will show you the recipe and how to cook Korko by yourself.
Ingredience
- Meat: Fish, Pork Rip, or Chicken. (My mum recipe like to cook with Fish and pork rip together)
- Vegetable៖ Pumpkin, young papaya, egg plant, long bean, young jack fruit, and leaf etc.
- Ingredient ៖ Greengrass, garlic, រំដេង រមៀត, orange leaf. Blend them all together.
- Other៖ Oil, palm sugar, pohok (can be replaced by fish source) fried rice, chili and 3 small bowl of water
How to cook it
- Heat your port and input some oil, and blended ingredient with prohok.
- Input Palm Sugar with 2 table spoon and stir them together about 1min.
- Input your meat and stir them well together until the meat is partly cooked
- Input the vegetable except the leaf (To put it at the last stage)
- Input some fish source, salt, and chilis
- Stir them for about 20-25mins
- Input the blended fried rice and water, boil them well and try to taste if you need to add some more salt or sugar.
